AI Dungeon and NovelAI both let you shape an unfolding story. Choose by the activity you enjoy: taking actions in an adventure, or working directly on its prose. NovelAI also has a Text Adventure mode, so the distinction is a preference, rather than a hard boundary.

AI Dungeon's Plot Components give players ways to guide a story's tone and important details. NovelAI's documentation covers an editor, Lorebook and Text Adventure mode. Both offer control beyond simply accepting the next passage. Try those controls before deciding either product is too loose or too demanding.
When trying a writing tool, revise a scene until it reads the way you want. When trying an adventure, make a decision without deciding its result in advance. Notice which activity you want to keep doing. That is a more useful distinction than a claim that one service is for serious players and the other is not.

Give continuity a fair trial
Keep a short note of a character, an unfinished promise and an item that changes hands. Revisit each after playing something else and after leaving the session. Use the features recommended by each maker, and record which settings and plan you tried.
This comparison has no controlled result that establishes a memory winner or a turn at which either service fails. Correct recall of a few details is useful evidence for your story. It does not prove complete recall, and a missed detail does not establish a product-wide ceiling.
